Part of the New London Light collection, ‘Midnight Sun’ is a bold contemporary non-alcoholic spirit, carefully distilled and crafted using 7 core botanicals and a further 7 natural botanical distillates and extracts, all of which have been hand-selected to showcase the flavours of the wild Nordic coastlines and nod towards the pillars of modern Nordic cuisine. A delicate combination of floral elderflower and fresh pine with a hint of berry sweetness and herbaceous dill on the nose. Sweet yet complex berry flavours on the palate with a faint hint of salinity from kelp and samphire. Floral notes from elderflower and resinous pine provide a full spectrum of flavour. The finish is long and lingering with sweetness making way for elderberry tartness, dryness from sage and pine and lasting sense of the sea from the subtle flavours of kelp. Salcombe Fruiters were schooner sailing vessels built in Salcombe and neighbouring Kingsbridge in the 19th century. These hand built ships were the fastest of their day, with copper sheathed hulls and an ability to sail close to the wind, they were small and fast to carry the highly perishable cargo of fresh fruits and spices from around the world to England’s ports. .
